Roast Goose with Baked Apples Recipe
Ingredients:
8 lb. goose
2 cups bread crumbs
1 onion; chopped
2 tbsp. fat
1/4 tsp. sage
1 tsp. salt
pinch pepper
8 apples
1/4 cup brown sugar
3 cups sweet potatoes; mashed
cinnamon to taste
nutmeg to taste
Cooking Instructions:
Cook goose giblets in salted water; cool and chop.
Combine giblets, breadcrumbs, onion, fat, sage, salt and pepper; stuff goose with dressing.
Secure goose with skewers and place in baking pan. Bake for 15 minutes at 500°F.
Reduce oven temperature to 350°F; bake for about 3 hours longer or until tender.
Core apples; sprinkle with brown sugar. Season sweet potatoes with spices; stuff apples with sweet potato mixture.
Place stuffed apples on baking sheet. Bake at 325°F degrees for about 25 minutes or until tender. Serve with goose.
Ready in: Approx. 3 hr. 45 min.
